To preserve, is a thing that must have haunted our early ancestors.
Think about it, you have to do without any natural sweeteners for maybe 6 months of the year. This is not because of some kind of odd ancient edict, it is just because keeping fruit in a bowl, box or jar means it is rotten within weeks and you are back to square one, nothing sweet and delicious to eat in those dark winter months. No wonder our ancestors may have felt themselves forsaken.
Humankind's ingenuity, however, has always been quite insatiable in overcoming hurdles put in front of it.

The earliest recorded history of Jam dates back to the 11th Century, as far as the time of the Crusades, when returning soldiers bought back with them Sugar, which was deemed to be a ‘new spice’ and the popularity of jam took off.
From those humble beginnings, there are now literally thousands of varieties created throughout the ages, with a good many unique varieties made by ourselves.
